Summer Peach Burrata Salad

ingredients:

For the Salad:

  • 3 ripe peaches
  • 1 cup of mixed cherry tomatoes 
  • 2 balls of burrata cheese
  • 1/2 cup of fresh basil leaves

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1 tablespoon honey
  • Salt and pepper to taste

directions:

  1. Prepare the Peaches:

    • Wash and slice the peaches into wedges. If desired, grill the peach slices for a few minutes on each side to enhance their natural sweetness and add a slight smokiness to the salad.
  2. Assemble:

    • Evenly distribute the peach slices and sliced tomatoes over the platter.
    • Tear the burrata balls into pieces and scatter them in the salad.
    • Sprinkle the basil.
  3. Prepare the Dressing:

    • Whisk the oil, balsamic glaze, honey, salt and pepper in a bowl until well combined. Drizzle over the salad.
  4. Serve and Enjoy:

    • Serve immediately to enjoy the fresh, vibrant flavors at their best. This salad pairs wonderfully with a chilled glass of white wine or sparkling water infused with citrus slices.
